Razor Clams – 2021


Galician razor clams live in the sands of the estuaries and bays near Cambados, Spain. They are manually farmed and harvested at the height of the season, by local women, using traditional methods.

Instead of being tinned with brine, which is typical, these razor clams are laid by hand and filled with Spanish olive oil, which gives them a richer taste and highlights their delicate bite.

Based in Vienna, Pyscis sells responsibly-sourced tinned fish in limited editions. They aim to produce the very best gourmet conserves, using lesser-known fish and seafood species.
